- 1 medium eggplant - 300 grams
- 2 medium tomatoes - 300 grams
- 1 cup shredded mozzarella cheese - 100 grams
- 1/2 cup grated Parmesan cheese - 50 grams
- 2 tablespoons olive oil - 30 ml
- 1 teaspoon dried oregano - 1 gram
- 1 teaspoon garlic powder - 3 grams
- Salt - to taste
- Black pepper - to taste
- Fresh basil leaves - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle salt on both sides. Let sit for 15 minutes to draw out moisture, then rinse and pat dry.
- Slice the tomatoes into 1 cm thick rounds.
- In a large skillet, heat olive oil over medium heat. Add the eggplant slices and cook for about 3-4 minutes on each side until golden and tender. Remove from heat.
- In a baking dish, layer half of the eggplant slices at the bottom, followed by half of the tomato slices. Sprinkle with half of the oregano, garlic powder, salt, and pepper.
- Top the first layer with half of the mozzarella cheese and half of the Parmesan cheese.
- Repeat the layers with the remaining eggplant, tomatoes, spices, and cheeses.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
- Let cool for a few minutes before garnishing with fresh basil leaves and serving.
