- Black Pepper - 1/2 teaspoon
- Fresh Basil - 2 tablespoons (chopped)
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out excess moisture.
- Rinse the eggplant slices under cold water and pat them dry with a paper towel.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the eggplant slices to the skillet and cook for about 5-7 minutes, turning occasionally until they are lightly browned and tender.
- In a baking dish, layer half of the cooked eggplant, followed by half of the mozzarella cheese, half of the grated Parmesan cheese, and half of the chopped basil. Repeat the layers.
- Sprinkle the dried oregano, salt, and black pepper evenly over the top layer.
