- 1 cup mozzarella cheese, shredded - 100 grams
- 1/2 cup marinara sauce - 120 grams
- 1/4 cup grated Parmesan cheese - 25 grams
- 1 tablespoon olive oil - 15 ml
- 1 teaspoon dried Italian herbs - 1 gram
- 1/2 teaspoon garlic powder - 2 grams
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish - optional
Steps
- Preheat your oven to 200°C (400°F).
- Slice the eggplant into 1/2 inch (1.25 cm) thick rounds and sprinkle with salt. Let it sit for 15 minutes to draw out excess moisture, then rinse and pat dry.
- In a skillet, heat the olive oil over medium heat. Add the eggplant slices and cook for about 2-3 minutes on each side until lightly browned. Remove from heat.
