- Medium eggplant - 1 (about 250g)
- Olive oil - 2 tablespoons
- Garlic cloves, minced - 2
- Canned crushed tomatoes - 200g
- Dried oregano - 1 teaspoon
- Dried basil - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Mozzarella cheese, shredded - 150g
- Parmesan cheese, grated - 30g
- Fresh basil leaves, for garnish - a handful
Steps
- Preheat your oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for about 15 minutes to draw out moisture, then rinse and pat dry.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the crushed tomatoes, oregano, basil, salt, and pepper to the skillet. Simmer for 10 minutes to allow the flavors to meld.
- In a greased baking dish, layer half of the eggplant slices. Spoon half of the tomato sauce over the eggplant, then sprinkle with half of the mozzarella cheese.
- Repeat the layers with the remaining eggplant, tomato sauce, and mozzarella cheese. Finish with a sprinkle of grated Parmesan cheese on top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
