Ingredients

  • Medium eggplant - 1 (about 250g)
  • Olive oil - 2 tablespoons
  • Garlic cloves, minced - 2
  • Canned crushed tomatoes - 200g
  • Dried oregano - 1 teaspoon
  • Dried basil - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mozzarella cheese, shredded - 150g
  • Parmesan cheese, grated - 30g
  • Fresh basil leaves, for garnish - a handful

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Slice the eggplant into 1 cm thick rounds and sprinkle with salt. Let it sit for about 15 minutes to draw out moisture, then rinse and pat dry.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the crushed tomatoes, oregano, basil, salt, and pepper to the skillet. Simmer for 10 minutes to allow the flavors to meld.
  5. In a greased baking dish, layer half of the eggplant slices. Spoon half of the tomato sauce over the eggplant, then sprinkle with half of the mozzarella cheese.
  6. Repeat the layers with the remaining eggplant, tomato sauce, and mozzarella cheese. Finish with a sprinkle of grated Parmesan cheese on top.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
