  • Cherry tomatoes - 5, halved
  • Onion - 1/4 medium, finely chopped
  • Feta cheese - 30 grams, crumbled
  • Olive oil - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dried oregano - 1/2 teaspoon

Steps

  1. Preheat your oven to 180°C (350°F) and lightly grease a muffin tin with olive oil.
  2. In a large mixing bowl, whisk together the egg whites, salt, black pepper, and dried oregano until well combined.
  3. Add the chopped spinach, diced bell pepper, halved cherry tomatoes, finely chopped onion, and crumbled feta cheese to the egg mixture. Stir until all ingredients are evenly distributed.
  4. Pour the egg mixture into the prepared muffin tin, filling each cup about 2/3 full.
  5. Bake in the preheated oven for 15-18 minutes or until the egg whites are set and the tops are lightly golden.
