- Feta cheese - 30 grams, crumbled
- Olive oil - 1 teaspoon
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Dried oregano - 1/2 teaspoon
Steps
- Preheat your oven to 180°C (350°F) and lightly grease a muffin tin with olive oil.
- In a large mixing bowl, whisk together the egg whites, salt, black pepper, and dried oregano until well combined.
- Add the chopped spinach, diced bell pepper, halved cherry tomatoes, finely chopped onion, and crumbled feta cheese to the egg mixture. Stir until all ingredients are evenly distributed.
- Pour the egg mixture into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 15-18 minutes or until the egg whites are set and the tops are lightly golden.
