  • Black pepper - 1/4 teaspoon
  • Optional: Sliced tomato - 2 slices
  • Optional: Fresh spinach - 1 handful

Steps

  1. Split the English muffins in half and toast them until golden brown.
  2. In a non-stick skillet, heat the olive oil over medium heat.
  3. Crack the eggs into the skillet, season with salt and black pepper, and cook to your desired doneness (sunny side up or scrambled).
  4. Once the eggs are nearly done, sprinkle the shredded cheddar cheese on top and cover the skillet to melt the cheese.
