Ingredients

  • All-purpose flour - 200 grams
  • Baking powder - 10 grams
  • Salt - 5 grams
  • Unsalted butter - 50 grams, cold and cubed
  • Milk - 120 ml
  • Eggs - 2 large
  • Cheddar cheese - 50 grams, shredded
  • Black pepper - to taste
  • Cooking oil - for frying

Steps

  1. Preheat your oven to 220°C (425°F).
  2. In a large bowl, combine the flour, baking powder, and salt.
  3. Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
  4. Pour in the milk and stir until just combined. Do not overmix.
  5. Turn the dough onto a floured surface and gently knead it a few times until it comes together.
  6. Roll the dough out to about 2.5 cm thick and cut into 4 rounds using a biscuit cutter.
  7. Place the biscuits on a baking sheet lined with parchment paper and bake in the preheated oven for 12-15 minutes or until golden brown.
  8. While the biscuits are baking, heat a non-stick skillet over medium heat and add a little cooking oil.
  9. In a bowl, whisk together the eggs, shredded cheese, and black pepper.
  10. Pour the egg mixture into the heated skillet and cook, stirring gently, until the eggs are softly scrambled and cooked through.
  11. Once the biscuits are done, remove them from the oven and let them cool slightly.
  12. Split the biscuits in half and fill each with the scrambled egg and cheese mixture.
