- All-purpose flour - 200 grams
- Baking powder - 10 grams
- Salt - 5 grams
- Unsalted butter - 50 grams, cold and cubed
- Milk - 120 ml
- Eggs - 2 large
- Cheddar cheese - 50 grams, shredded
- Black pepper - to taste
- Cooking oil - for frying
Steps
- Preheat your oven to 220°C (425°F).
- In a large bowl, combine the flour, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Pour in the milk and stir until just combined. Do not overmix.
- Turn the dough onto a floured surface and gently knead it a few times until it comes together.
- Roll the dough out to about 2.5 cm thick and cut into 4 rounds using a biscuit cutter.
- Place the biscuits on a baking sheet lined with parchment paper and bake in the preheated oven for 12-15 minutes or until golden brown.
- While the biscuits are baking, heat a non-stick skillet over medium heat and add a little cooking oil.
- In a bowl, whisk together the eggs, shredded cheese, and black pepper.
- Pour the egg mixture into the heated skillet and cook, stirring gently, until the eggs are softly scrambled and cooked through.
- Once the biscuits are done, remove them from the oven and let them cool slightly.
- Split the biscuits in half and fill each with the scrambled egg and cheese mixture.
