- Bacon - 4 strips
- Large eggs - 4
- Cheddar cheese, shredded - 60 grams
- Salt - 1/4 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh chives, chopped - 1 tablespoon (optional)
Steps
- Preheat the oven to 190°C (375°F).
- Grease a muffin tin with cooking spray or oil.
- Cook the bacon strips in a skillet over medium heat until they are crispy, about 5-7 minutes. Remove and let drain on paper towels.
- Cut each bacon strip in half and place them around the edge of each muffin cup to form a cup shape.
- In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined.
- Pour the egg mixture into each bacon cup, filling them about 3/4 full.
- Sprinkle shredded cheddar cheese evenly over the top of each cup.
- Bake in the preheated oven for 15-20 minutes, or until the eggs are fully set.
- Remove from the oven and let cool for a couple of minutes before gently removing the cups from the muffin tin.
- Garnish with chopped chives if desired, and serve warm.
