Ingredients

  • Bacon - 4 strips
  • Large eggs - 4
  • Cheddar cheese, shredded - 60 grams
  • Salt - 1/4 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh chives, chopped - 1 tablespoon (optional)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Grease a muffin tin with cooking spray or oil.
  3. Cook the bacon strips in a skillet over medium heat until they are crispy, about 5-7 minutes. Remove and let drain on paper towels.
  4. Cut each bacon strip in half and place them around the edge of each muffin cup to form a cup shape.
  5. In a mixing bowl, whisk together the eggs, salt, and black pepper until well combined.
  6. Pour the egg mixture into each bacon cup, filling them about 3/4 full.
  7. Sprinkle shredded cheddar cheese evenly over the top of each cup.
  8. Bake in the preheated oven for 15-20 minutes, or until the eggs are fully set.
  9. Remove from the oven and let cool for a couple of minutes before gently removing the cups from the muffin tin.
  10. Garnish with chopped chives if desired, and serve warm.
