Ingredients

  • Whole grain tortillas - 2 pieces
  • Large eggs - 4
  • Ripe avocado - 1 medium
  • Cherry tomatoes - 100 grams, halved
  • Fresh spinach - 60 grams
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped (optional)

Steps

  1. In a small bowl, mash the ripe avocado with lime juice, salt, and black pepper. Set aside.
  2. In a non-stick skillet, heat olive oil over medium heat. Crack the eggs into the skillet and scramble until fully cooked, about 3-4 minutes.
  3. Season the scrambled eggs with a pinch of salt and black pepper to taste.
  4. Warm the whole grain tortillas in a dry skillet for about 30 seconds on each side until pliable.
  5. Spread the mashed avocado evenly on each tortilla.
  6. Layer the scrambled eggs, fresh spinach, and halved cherry tomatoes on top of the avocado.
