Steps
- Rinse the brown rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent, about 3-4 minutes.
- Add the diced bell pepper and zucchini to the pan, cooking for an additional 5 minutes until softened.
