- Potatoes - 200 grams, diced
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Heavy cream - 100 ml
- Fresh dill - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent, about 5 minutes.
- Add the diced potatoes to the pot and stir well. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for about 15 minutes, or until the potatoes are tender.
- Stir in the chopped dill pickles and fresh dill, cooking for an additional 5 minutes.
- Using an immersion blender, carefully blend the soup until smooth. Alternatively, transfer the soup to a blender in batches, blending until smooth and returning to the pot.
