Ingredients

  • Eggs - 4 large
  • Greek yogurt - 2 tablespoons
  • Dijon mustard - 1 teaspoon
  • Apple cider vinegar - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Black pepper - 1/8 teaspoon
  • Paprika - for garnish
  • Chives - 1 tablespoon, chopped

Steps

  1. Place the eggs in a saucepan and cover them with cold water.
  2. Bring the water to a boil over medium-high heat, then cover the pan and remove it from heat. Let the eggs sit for 12 minutes.
  3. After 12 minutes, transfer the eggs to an ice bath to cool for about 5 minutes.
  4. Once cooled, peel the eggs and slice them in half lengthwise.
  5. Carefully remove the yolks and place them in a mixing bowl. Set the egg whites aside.
  6. Mash the yolks with a fork and add Greek yogurt, Dijon mustard, apple cider vinegar, salt, and black pepper. Mix until smooth and creamy.
  7. Spoon or pipe the yolk mixture back into the egg whites.
  8. Sprinkle with paprika and chopped chives for garnish before serving.
