- 2 large eggs
- 1 ripe avocado
- 1 tablespoon mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon lime juice
- Salt - to taste
- Black pepper - to taste
- Paprika - for garnish
- Chopped chives - for garnish
Steps
- Place the eggs in a saucepan and cover them with water. Bring the water to a boil over medium-high heat.
- Once boiling, cover the saucepan, remove it from heat, and let it sit for 10-12 minutes.
- After the time is up, transfer the eggs to a bowl of ice water to cool for about 5 minutes.
- Peel the cooled eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
- Add the avocado, mayonnaise, Dijon mustard, lime juice, salt, and black pepper to the bowl with the yolks. Mash everything together until smooth and creamy.
- Spoon or pipe the avocado mixture back into the egg white halves.
- Sprinkle with paprika and garnish with chopped chives before serving.
