Ingredients

  • 2 large eggs
  • 1 ripe avocado
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lime juice
  • Salt - to taste
  • Black pepper - to taste
  • Paprika - for garnish
  • Chopped chives - for garnish

Steps

  1. Place the eggs in a saucepan and cover them with water. Bring the water to a boil over medium-high heat.
  2. Once boiling, cover the saucepan, remove it from heat, and let it sit for 10-12 minutes.
  3. After the time is up, transfer the eggs to a bowl of ice water to cool for about 5 minutes.
  4. Peel the cooled eggs and slice them in half lengthwise. Remove the yolks and place them in a mixing bowl.
  5. Add the avocado, mayonnaise, Dijon mustard, lime juice, salt, and black pepper to the bowl with the yolks. Mash everything together until smooth and creamy.
  6. Spoon or pipe the avocado mixture back into the egg white halves.
  7. Sprinkle with paprika and garnish with chopped chives before serving.
