Ingredients

  • Water - 2 cups (480ml)
  • Raw honey - 1/2 cup (120ml)
  • Lemon juice - 2 tablespoons (30ml)
  • Cinnamon - 1/2 teaspoon (2g)

Steps

  1. Harvest dandelion flowers from a clean area, ensuring no pesticides have been used.
  2. Carefully remove the yellow petals from the green base of the flowers, as the greens can be bitter.
  3. In a medium pot, combine the dandelion petals and water, bringing it to a boil over medium heat.
  4. Once boiling, reduce the heat and let it simmer for about 10 minutes.
  5. Strain the mixture through a fine mesh sieve or cheesecloth into a clean bowl, discarding the solids.
  6. Return the liquid to the pot and add the raw honey, lemon juice, and cinnamon.
  7. Stir well and bring the mixture to a gentle simmer for another 5-10 minutes, allowing it to thicken slightly.
  8. Remove from heat and let it cool before transferring to a clean jar.
