- Coconut milk - 1/2 cup (120ml)
- Maple syrup - 2 tablespoons (30ml)
- Vanilla extract - 1 teaspoon (5ml)
- Ground cinnamon - 1/2 teaspoon (2g)
- Ground nutmeg - 1/4 teaspoon (1g)
- Salt - 1/4 teaspoon (1.5g)
- Pecans - 1/4 cup (30g), chopped
- Oats - 1/4 cup (25g)
- Coconut oil - 1 tablespoon (15ml), melted
Steps
- Preheat the oven to 375°F (190°C).
- Peel and chop the sweet potatoes into small cubes.
- Boil the sweet potato cubes in a pot of water for about 15 minutes, or until they are fork-tender.
- Drain the sweet potatoes and return them to the pot.
- Add the coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt to the sweet potatoes. Mash until smooth and creamy.
- Transfer the sweet potato mixture into a greased small baking dish.
- In a separate bowl, mix the chopped pecans, oats, and melted coconut oil until combined.
- Sprinkle the pecan mixture evenly over the sweet potato mash.
- Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown.
