Ingredients

  • Sweet potatoes - 2 medium (about 400g)
  • Coconut milk - 1/2 cup (120ml)
  • Maple syrup - 2 tablespoons (30ml)
  • Vanilla extract - 1 teaspoon (5ml)
  • Ground cinnamon - 1/2 teaspoon (2g)
  • Ground nutmeg - 1/4 teaspoon (1g)
  • Salt - 1/4 teaspoon (1.5g)
  • Pecans - 1/4 cup (30g), chopped
  • Oats - 1/4 cup (25g)
  • Coconut oil - 1 tablespoon (15ml), melted

Steps

  1. Preheat the oven to 375°F (190°C).
  2. Peel and chop the sweet potatoes into small cubes.
  3. Boil the sweet potato cubes in a pot of water for about 15 minutes, or until they are fork-tender.
  4. Drain the sweet potatoes and return them to the pot.
  5. Add the coconut milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt to the sweet potatoes. Mash until smooth and creamy.
  6. Transfer the sweet potato mixture into a greased small baking dish.
  7. In a separate bowl, mix the chopped pecans, oats, and melted coconut oil until combined.
  8. Sprinkle the pecan mixture evenly over the sweet potato mash.
  9. Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown.
