- 2 large bell peppers - any color
- 100 grams quinoa - rinsed
- 200 ml vegetable broth
- 100 grams canned black beans - drained and rinsed
- 50 grams corn - canned or frozen
- 1 small onion - diced
- 2 cloves garlic - minced
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt - to taste
- Pepper - to taste
- 2 tablespoons olive oil
- Fresh cilantro - for garnish (optional)
Steps
- Preheat the oven to 190°C (375°F).
- Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
- In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, smoked paprika, salt, and pepper to the onions and sauté for another minute until fragrant.
- Stir in the quinoa and vegetable broth, bringing it to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is cooked and the liquid is absorbed.
- Remove from heat and fluff the quinoa with a fork. Stir in the black beans and corn until well combined.
- Stuff each bell pepper with the quinoa mixture, pressing down gently to pack it in.
- Drizzle the remaining olive oil over the stuffed peppers and cover the baking dish with aluminum foil.
- Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender.
- Garnish with fresh cilantro if desired and serve warm.
