Ingredients

  • 2 large bell peppers - any color
  • 100 grams quinoa - rinsed
  • 200 ml vegetable broth
  • 100 grams canned black beans - drained and rinsed
  • 50 grams corn - canned or frozen
  • 1 small onion - diced
  • 2 cloves garlic - minced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt - to taste
  • Pepper - to taste
  • 2 tablespoons olive oil
  • Fresh cilantro - for garnish (optional)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  3. In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic, cumin, smoked paprika, salt, and pepper to the onions and sauté for another minute until fragrant.
  5. Stir in the quinoa and vegetable broth, bringing it to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is cooked and the liquid is absorbed.
  6. Remove from heat and fluff the quinoa with a fork. Stir in the black beans and corn until well combined.
  7. Stuff each bell pepper with the quinoa mixture, pressing down gently to pack it in.
  8. Drizzle the remaining olive oil over the stuffed peppers and cover the baking dish with aluminum foil.
  9. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender.
  10. Garnish with fresh cilantro if desired and serve warm.
