- Brown lentils - 100 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Vegetable broth - 250 ml
- Tomato paste - 1 tablespoon
- Worcestershire sauce - 1 teaspoon
- Olive oil - 1 tablespoon
- Frozen peas - 50 grams
- Potatoes - 300 grams, peeled and cubed
- Unsweetened almond milk - 50 ml
- Nutritional yeast - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh thyme - 1 teaspoon, chopped (or 1/2 teaspoon dried)
Steps
- Preheat your oven to 190°C (375°F).
- In a pot, boil the cubed potatoes in salted water for about 15-20 minutes, or until tender. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add diced onion, carrot, and celery, cooking for about 5-7 minutes until softened.
- Add minced garlic and cook for another minute until fragrant.
- Stir in the brown lentils, vegetable broth, tomato paste, Worcestershire sauce, and thyme. Bring to a simmer and cook for about 20-25 minutes, or until the lentils are tender. Stir in frozen peas and season with salt and black pepper.
- While the lentil mixture simmers, mash the boiled potatoes with almond milk, nutritional yeast, and a pinch of salt until creamy.
- Transfer the lentil mixture into a small baking dish and spread the mashed potatoes evenly on top.
- Bake in the preheated oven for 20 minutes, or until the top is slightly golden.
- Remove from the oven, let it cool for a few minutes, then serve warm.
