Ingredients

  • Brown lentils - 100 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 250 ml
  • Tomato paste - 1 tablespoon
  • Worcestershire sauce - 1 teaspoon
  • Olive oil - 1 tablespoon
  • Frozen peas - 50 grams
  • Potatoes - 300 grams, peeled and cubed
  • Unsweetened almond milk - 50 ml
  • Nutritional yeast - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh thyme - 1 teaspoon, chopped (or 1/2 teaspoon dried)

Steps

  1. Preheat your oven to 190°C (375°F).
  2. In a pot, boil the cubed potatoes in salted water for about 15-20 minutes, or until tender. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add diced onion, carrot, and celery, cooking for about 5-7 minutes until softened.
  4. Add minced garlic and cook for another minute until fragrant.
  5. Stir in the brown lentils, vegetable broth, tomato paste, Worcestershire sauce, and thyme. Bring to a simmer and cook for about 20-25 minutes, or until the lentils are tender. Stir in frozen peas and season with salt and black pepper.
  6. While the lentil mixture simmers, mash the boiled potatoes with almond milk, nutritional yeast, and a pinch of salt until creamy.
  7. Transfer the lentil mixture into a small baking dish and spread the mashed potatoes evenly on top.
  8. Bake in the preheated oven for 20 minutes, or until the top is slightly golden.
  9. Remove from the oven, let it cool for a few minutes, then serve warm.
