Ingredients

  • Firm tofu - 200 grams
  • Nutritional yeast - 2 tablespoons

  • Onion powder - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Spinach - 100 grams, chopped
  • Red bell pepper - 1/2, diced
  • Mushrooms - 100 grams, sliced
  • Dairy-free pie crust - 1 (store-bought or homemade)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium bowl, crumble the firm tofu and add nutritional yeast, olive oil, garlic powder, onion powder, turmeric, salt, and black pepper. Mix until smooth and creamy.
  3. In a frying pan over medium heat, sauté the chopped spinach, diced red bell pepper, and sliced mushrooms until softened, about 5-7 minutes.
  4. Remove the sautéed vegetables from the heat and let them cool slightly.
  5. Combine the sautéed vegetables with the tofu mixture, stirring until well incorporated.
  6. Place the dairy-free pie crust in a 9-inch pie dish and pour the tofu and vegetable mixture into the crust, spreading it evenly.
  7. Bake in the preheated oven for 25-30 minutes, or until the quiche is firm and slightly golden on top.
  8. Let it cool for a few minutes before slicing and serving.
