- Mushrooms - 100 grams, sliced
- Dairy-free pie crust - 1 (store-bought or homemade)
Steps
- Preheat the oven to 180°C (350°F).
- In a medium bowl, crumble the firm tofu and add nutritional yeast, olive oil, garlic powder, onion powder, turmeric, salt, and black pepper. Mix until smooth and creamy.
- In a frying pan over medium heat, sauté the chopped spinach, diced red bell pepper, and sliced mushrooms until softened, about 5-7 minutes.
- Remove the sautéed vegetables from the heat and let them cool slightly.
- Combine the sautéed vegetables with the tofu mixture, stirring until well incorporated.
- Place the dairy-free pie crust in a 9-inch pie dish and pour the tofu and vegetable mixture into the crust, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the quiche is firm and slightly golden on top.
- Let it cool for a few minutes before slicing and serving.
