Ingredients

  • Potatoes - 400 grams
  • Coconut milk - 200 ml
  • Nutritional yeast - 3 tablespoons
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh thyme - 1 teaspoon, or ½ teaspoon dried thyme
  • Paprika - ½ teaspoon
  • Breadcrumbs (gluten-free if needed) - 2 tablespoons

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Wash and peel the potatoes, then slice them thinly (about 3-4 mm thick) using a mandoline or a sharp knife.
  3. In a saucepan, combine the coconut milk, nutritional yeast, olive oil, minced garlic, onion powder, salt, black pepper, thyme, and paprika. Heat over medium heat until warmed but not boiling, stirring to combine.
  4. In a greased baking dish, layer half of the sliced potatoes, overlapping them slightly.
  5. Pour half of the coconut milk mixture over the first layer of potatoes, ensuring they are coated evenly.
  6. Add the remaining potato slices on top of the first layer, then pour the rest of the coconut milk mixture over these potatoes.
  7. Sprinkle the breadcrumbs evenly over the top layer of potatoes for a crispy finish.
  8. Cover the baking dish with foil and bake for 40 minutes. Remove the foil and bake for an additional 10-15 minutes or until the top is golden and the potatoes are tender.
  9. Remove from the oven and let it sit for a few minutes before serving.
