- Onion powder - 1 teaspoon

- Black pepper - ½ teaspoon
- Fresh thyme - 1 teaspoon, or ½ teaspoon dried thyme
- Paprika - ½ teaspoon
- Breadcrumbs (gluten-free if needed) - 2 tablespoons
Steps
- Preheat your oven to 180°C (350°F).
- Wash and peel the potatoes, then slice them thinly (about 3-4 mm thick) using a mandoline or a sharp knife.
- In a saucepan, combine the coconut milk, nutritional yeast, olive oil, minced garlic, onion powder, salt, black pepper, thyme, and paprika. Heat over medium heat until warmed but not boiling, stirring to combine.
- In a greased baking dish, layer half of the sliced potatoes, overlapping them slightly.
- Pour half of the coconut milk mixture over the first layer of potatoes, ensuring they are coated evenly.
- Add the remaining potato slices on top of the first layer, then pour the rest of the coconut milk mixture over these potatoes.
- Sprinkle the breadcrumbs evenly over the top layer of potatoes for a crispy finish.
- Cover the baking dish with foil and bake for 40 minutes. Remove the foil and bake for an additional 10-15 minutes or until the top is golden and the potatoes are tender.
- Remove from the oven and let it sit for a few minutes before serving.
