  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Gluten-free breadcrumbs - 1/4 cup (30g)
  • Paprika - 1/2 teaspoon

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Peel and thinly slice the russet potatoes into about 1/8-inch thick rounds.
  3. In a large bowl, combine the olive oil, dairy-free milk, nutritional yeast, garlic powder, onion powder, salt, and black pepper. Whisk until well mixed.
  4. Layer half of the sliced potatoes in a greased baking dish, then pour half of the dairy-free mixture over the potatoes.
  5. Repeat with the remaining potatoes and the remaining dairy-free mixture, ensuring all the potatoes are covered.
  6. Sprinkle the gluten-free breadcrumbs evenly over the top layer of potatoes, then dust with paprika.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  8. Remove the foil and bake for an additional 15 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.
