Ingredients

  • Ground turkey - 250 grams
  • Rolled oats - 50 grams
  • Chopped onion - 50 grams
  • Minced garlic - 2 cloves
  • Carrot, grated - 1 medium
  • Dijon mustard - 1 tablespoon
  • Tomato paste - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Dairy-free milk (almond or soy) - 60 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Ketchup - 2 tablespoons for topping

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, combine the ground turkey, rolled oats, chopped onion, minced garlic, grated carrot, Dijon mustard, tomato paste, soy sauce, dairy-free milk, salt, black pepper, and chili powder.
  3. Mix the ingredients together until well combined, using your hands or a spoon.
  4. Transfer the meat mixture into a loaf pan, shaping it into a loaf form.
  5. Spread the ketchup evenly over the top of the meatloaf.
  6. Drizzle the olive oil over the top for added moisture.
  7. Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through and the internal temperature reaches 74°C (165°F).
  8. Let the meatloaf rest for 10 minutes before slicing and serving.
