Steps
- Preheat your oven to 190°C (375°F).
- In a large oven-safe skillet, heat olive oil over medium heat. Add diced onion, green bell pepper, and celery, sautéing until softened, about 5 minutes.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Add rice to the skillet and stir to coat it with the vegetables and oil for about 2 minutes.
- Pour in the vegetable broth, canned diced tomatoes (with juices), Cajun seasoning, smoked paprika, salt, and black pepper. Stir well to combine.
- Bring the mixture to a simmer and then add the kidney beans and corn. Stir gently.
- Cover the skillet with a lid or foil and transfer it to the preheated oven. Bake for 25 minutes.
- After 25 minutes, remove the skillet from the oven and let it sit, covered, for 5 minutes.
- Fluff the jambalaya with a fork, then stir in chopped parsley and lemon juice before serving.
