  • Red kidney beans - 1/2 cup, rinsed and drained
  • Corn - 1/2 cup, frozen or canned
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat your oven to 190°C (375°F).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Add diced onion, green bell pepper, and celery, sautéing until softened, about 5 minutes.
