Ingredients

  • Grits - 1 cup (240 ml)
  • Water - 2 cups (480 ml)
  • Olive oil - 1 tablespoon (15 ml)
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1/2, diced
  • Spinach - 1 cup (30 g), chopped
  • Nutritional yeast - 2 tablespoons (30 g)
  • Dairy-free cheese (shredded) - 1/2 cup (60 g)
  • Salt - 1/2 teaspoon (3 g)
  • Black pepper - 1/4 teaspoon (1 g)
  • Breadcrumbs (gluten-free if needed) - 1/4 cup (30 g)
  • Fresh parsley - 1 tablespoon (15 g), chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium saucepan, bring 2 cups of water to a boil. Gradually whisk in the grits, reduce heat to low, and cook for 5-7 minutes until thickened, stirring occasionally.
  3. In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
  4. Add minced garlic and diced bell pepper to the skillet, cooking for another 2-3 minutes until softened.
  5. Stir in chopped spinach and cook until wilted, about 1-2 minutes. Remove from heat.
  6. Combine the cooked grits, sautéed vegetables, nutritional yeast, dairy-free cheese, salt, and black pepper in a mixing bowl. Mix well.
  7. Transfer the grits mixture into a greased small baking dish, spreading it out evenly.
  8. Sprinkle breadcrumbs on top of the grits mixture.
  9. Bake in the preheated oven for 20 minutes until the top is golden and crispy.
  10. Remove from the oven, let cool for a few minutes, and garnish with fresh parsley before serving.
