- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Bell pepper - 1/2, diced
- Spinach - 1 cup (30 g), chopped
- Nutritional yeast - 2 tablespoons (30 g)
- Dairy-free cheese (shredded) - 1/2 cup (60 g)
- Salt - 1/2 teaspoon (3 g)
- Black pepper - 1/4 teaspoon (1 g)
- Breadcrumbs (gluten-free if needed) - 1/4 cup (30 g)
- Fresh parsley - 1 tablespoon (15 g), chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- In a medium saucepan, bring 2 cups of water to a boil. Gradually whisk in the grits, reduce heat to low, and cook for 5-7 minutes until thickened, stirring occasionally.
- In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 3-4 minutes.
- Add minced garlic and diced bell pepper to the skillet, cooking for another 2-3 minutes until softened.
- Stir in chopped spinach and cook until wilted, about 1-2 minutes. Remove from heat.
- Combine the cooked grits, sautéed vegetables, nutritional yeast, dairy-free cheese, salt, and black pepper in a mixing bowl. Mix well.
- Transfer the grits mixture into a greased small baking dish, spreading it out evenly.
- Sprinkle breadcrumbs on top of the grits mixture.
- Bake in the preheated oven for 20 minutes until the top is golden and crispy.
- Remove from the oven, let cool for a few minutes, and garnish with fresh parsley before serving.
