Ingredients

  • Green beans - 200 grams, trimmed
  • Mushrooms (sliced) - 150 grams
  • Onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Coconut milk - 100 ml
  • Vegetable broth - 100 ml
  • Gluten-free flour - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Soy sauce (or tamari) - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Gluten-free fried onions - 30 grams (for topping)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a pot of boiling water, blanch the green beans for 3-4 minutes until bright green and tender-crisp. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until softened.
  4. Add minced garlic and sliced mushrooms to the skillet, cooking for another 5-7 minutes until the mushrooms are browned and tender.
  5. Sprinkle gluten-free flour over the mushroom mixture, stirring to combine and cook for 1 minute.
  6. Slowly whisk in the vegetable broth and coconut milk, then add soy sauce, thyme, salt, and pepper. Stir until the mixture thickens, about 3-5 minutes.
  7. In a mixing bowl, combine the blanched green beans with the mushroom sauce, ensuring the beans are well coated.
  8. Transfer the green bean mixture into a small baking dish and spread it evenly.
  9. Top with gluten-free fried onions and bake in the preheated oven for 15-20 minutes, until heated through and the onions are golden brown.
  10. Remove from the oven and let it cool slightly before serving.
