Steps
- Preheat your oven to 180°C (350°F).
- In a pot of boiling water, blanch the green beans for 3-4 minutes until bright green and tender-crisp. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté for about 3 minutes until softened.
- Add minced garlic and sliced mushrooms to the skillet, cooking for another 5-7 minutes until the mushrooms are browned and tender.

- Slowly whisk in the vegetable broth and coconut milk, then add soy sauce, thyme, salt, and pepper. Stir until the mixture thickens, about 3-5 minutes.
- In a mixing bowl, combine the blanched green beans with the mushroom sauce, ensuring the beans are well coated.
- Transfer the green bean mixture into a small baking dish and spread it evenly.
- Top with gluten-free fried onions and bake in the preheated oven for 15-20 minutes, until heated through and the onions are golden brown.
