  • Elbow macaroni - 150 grams
  • Ground beef or turkey - 200 grams
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Canned diced tomatoes - 400 grams
  • Tomato sauce - 200 grams
  • Vegetable broth - 240 ml
  • Paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Dairy-free cheese shreds (optional) - 50 grams

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cook the elbow macaroni according to package instructions until al dente, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add diced onion and garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  4. Add the ground beef or turkey to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  5. Stir in the diced bell pepper, canned diced tomatoes, tomato sauce, vegetable broth, paprika, oregano, salt, and black pepper. Bring the mixture to a simmer and let it cook for about 10 minutes.
  6. Combine the cooked macaroni with the meat and sauce mixture, stirring until well coated.
  7. Transfer the mixture to a baking dish and, if desired, sprinkle dairy-free cheese shreds on top.
  8. Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.
