  • Cooked chicken, shredded - 200 grams
  • Carrots, diced - 1 medium (about 70 grams)
  • Frozen peas - 50 grams
  • Potato, diced - 1 medium (about 150 grams)
  • Onion, chopped - 1 small (about 50 grams)
  • Garlic, minced - 2 cloves
  • Dairy-free butter - 2 tablespoons (30 grams)
  • All-purpose flour - 2 tablespoons (15 grams)
  • Vegetable broth - 1 cup (240 ml)
  • Coconut milk - 1/2 cup (120 ml)
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Dairy-free pie crust - 1 (store-bought or homemade)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a large skillet, melt the dairy-free butter over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent.
  3. Add the diced carrots and potatoes to the skillet, cooking for about 5 minutes until they start to soften.
  4. Sprinkle the flour over the vegetables, stirring to coat them evenly. Gradually pour in the vegetable broth while stirring to avoid lumps.
  5. Add the coconut milk, shredded chicken, frozen peas, dried thyme, salt, and black pepper. Stir well to combine and let simmer for about 10 minutes until the mixture thickens.
  6. Remove the skillet from heat and let the filling cool slightly.
  7. Roll out the dairy-free pie crust and place it in a small pie dish. Pour the chicken and vegetable filling into the crust.
  8. Cover with the second layer of pie crust or create a lattice design on top. Seal the edges and cut a few slits in the top crust for steam to escape.
