- Potato, diced - 1 medium (about 150 grams)
- Onion, chopped - 1 small (about 50 grams)
- Garlic, minced - 2 cloves
- Dairy-free butter - 2 tablespoons (30 grams)
- All-purpose flour - 2 tablespoons (15 grams)
- Vegetable broth - 1 cup (240 ml)
- Coconut milk - 1/2 cup (120 ml)
- Dried thyme - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Dairy-free pie crust - 1 (store-bought or homemade)
Steps
- Preheat your oven to 200°C (400°F).
- In a large skillet, melt the dairy-free butter over medium heat. Add the chopped onions and minced garlic, sautéing until the onions are translucent.
- Add the diced carrots and potatoes to the skillet, cooking for about 5 minutes until they start to soften.
- Sprinkle the flour over the vegetables, stirring to coat them evenly. Gradually pour in the vegetable broth while stirring to avoid lumps.
- Add the coconut milk, shredded chicken, frozen peas, dried thyme, salt, and black pepper. Stir well to combine and let simmer for about 10 minutes until the mixture thickens.
- Remove the skillet from heat and let the filling cool slightly.
- Roll out the dairy-free pie crust and place it in a small pie dish. Pour the chicken and vegetable filling into the crust.
- Cover with the second layer of pie crust or create a lattice design on top. Seal the edges and cut a few slits in the top crust for steam to escape.
