- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Frozen peas - 1/2 cup (75 grams)
- Dried thyme - 1 teaspoon
- Paprika - 1 teaspoon

- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the diced chicken breast to the skillet, season with salt, pepper, paprika, and thyme. Cook until the chicken is browned, about 5-7 minutes.

- Add the brown rice to the skillet, followed by the vegetable broth and coconut milk. Mix well to combine all ingredients.
- Bring the mixture to a gentle simmer. Once simmering, remove from heat and cover the skillet with a lid or aluminum foil.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the rice is cooked and the liquid is absorbed.
