  • Coconut milk - 1/2 cup (120 ml)
  • Olive oil - 1 tablespoon (15 ml)
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Frozen peas - 1/2 cup (75 grams)
  • Dried thyme - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large oven-safe skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
