- Dairy-free parmesan cheese - 30 grams, grated
- Italian seasoning - 1 teaspoon

Steps
- Preheat the oven to 180°C (350°F).
- Cook the ziti pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent, about 3-4 minutes.
- Add the diced red bell pepper and sliced mushrooms to the skillet. Cook for an additional 5-7 minutes until softened.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Add the crushed tomatoes, Italian seasoning, salt, and black pepper. Simmer for 5 minutes to let the flavors meld together.
- In a large mixing bowl, combine the cooked ziti pasta with the tomato mixture, mixing well to coat the pasta evenly.
- Transfer half of the ziti mixture to a baking dish, sprinkle half of the dairy-free mozzarella cheese on top, then layer the remaining ziti mixture and finish with the rest of the mozzarella and the dairy-free parmesan cheese.
