  • Mushrooms - 150 grams, sliced
  • Spinach - 100 grams, fresh
  • Crushed tomatoes - 400 grams (1 can)
  • Dairy-free mozzarella cheese - 100 grams, shredded
  • Dairy-free parmesan cheese - 30 grams, grated
  • Italian seasoning - 1 teaspoon

  • Black pepper - to taste
  • Fresh basil - for garnish (optional)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Cook the ziti pasta according to package instructions until al dente, then drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion is translucent, about 3-4 minutes.
  4. Add the diced red bell pepper and sliced mushrooms to the skillet. Cook for an additional 5-7 minutes until softened.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  6. Add the crushed tomatoes, Italian seasoning, salt, and black pepper. Simmer for 5 minutes to let the flavors meld together.
