- Canned navy beans - 400 grams (drained and rinsed)
- Olive oil - 1 tablespoon
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Maple syrup - 2 tablespoons
- Tomato paste - 2 tablespoons
- Dijon mustard - 1 tablespoon
- Apple cider vinegar - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Water - 120 milliliters
Steps
- Preheat your oven to 180°C (350°F).
- In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
- In a large mixing bowl, combine the drained navy beans, sautéed onion and garlic, maple syrup, tomato paste, Dijon mustard, apple cider vinegar, smoked paprika, salt, black pepper, and water. Mix well until all ingredients are incorporated.
- Transfer the mixture into a small baking dish and spread it evenly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15 minutes to allow the top to caramelize slightly.
- Remove from the oven, let cool for a few minutes, and serve warm.
