Ingredients

  • Basmati rice - 1 cup (200g)
  • Water - 2 cups (500ml)
  • Chicken breast, diced - 200g
  • Olive oil - 2 tablespoons (30ml)
  • Onion, chopped - 1 medium (150g)
  • Garlic, minced - 2 cloves
  • Ginger, grated - 1 teaspoon
  • Carrot, diced - 1 medium (100g)
  • Bell pepper, diced - 1 medium (150g)
  • Coconut milk - 1 cup (240ml)
  • Curry powder - 2 tablespoons (30g)
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro, chopped - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear. Combine the rice and 2 cups of water in a pot, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the rice is cooked and water is absorbed.
  2. While the rice is cooking, heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and grated ginger to the skillet, cooking for another minute until fragrant.
  4. Stir in the diced chicken breast, cooking until the chicken is no longer pink, about 5-7 minutes.
  5. Add the diced carrot and bell pepper to the skillet, mixing well, and cook for an additional 3-4 minutes.
  6. Sprinkle the curry powder over the chicken and vegetables, stirring to coat evenly. Pour in the coconut milk, and season with salt and black pepper to taste. Bring the mixture to a gentle simmer and cook for about 5 minutes until the sauce thickens slightly.
  7. Once the rice is done, fluff it with a fork and serve it on plates topped with the curry mixture. Garnish with freshly chopped cilantro.
