  • Coconut milk - 1/2 cup

  • Garlic - 2 cloves, minced
  • Ginger - 1 inch, grated
  • Curry powder - 1 tablespoon
  • Turmeric - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Spinach - 2 cups, fresh
  • Lemon juice - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the green lentils under cold water and set aside.
  2. In a medium pot, heat olive oil over medium heat and sauté the diced onion until translucent, about 5 minutes.
  3. Add minced garlic and grated ginger; cook for an additional 1-2 minutes until fragrant.
  4. Stir in the curry powder, turmeric, cumin, and salt, cooking for another minute to toast the spices.
  5. Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until lentils are tender.
  6. Once lentils are cooked, stir in the coconut milk and fresh spinach. Cook for another 3-5 minutes until the spinach has wilted.
  7. Remove from heat and add lemon juice. Adjust seasoning to taste.
  8. Serve hot, garnished with chopped cilantro.
