- Coconut milk - 1/2 cup

- Ginger - 1 inch, grated
- Curry powder - 1 tablespoon
- Turmeric - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Spinach - 2 cups, fresh
- Lemon juice - 1 tablespoon
- Cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the green lentils under cold water and set aside.
- In a medium pot, heat olive oil over medium heat and sauté the diced onion until translucent, about 5 minutes.
- Add minced garlic and grated ginger; cook for an additional 1-2 minutes until fragrant.
- Stir in the curry powder, turmeric, cumin, and salt, cooking for another minute to toast the spices.
- Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for 20 minutes, or until lentils are tender.
- Once lentils are cooked, stir in the coconut milk and fresh spinach. Cook for another 3-5 minutes until the spinach has wilted.
- Remove from heat and add lemon juice. Adjust seasoning to taste.
- Serve hot, garnished with chopped cilantro.
