- Vegetable broth - 2 cups (500ml)
- Coconut milk - 1/2 cup (120ml)
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red bell pepper - 1, diced
- Curry powder - 1 tablespoon
- Ground cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the green lentils under cold water and set aside.
- In a medium pot, heat olive oil over medium heat. Add diced onion, garlic, carrot, celery, and red bell pepper. Sauté for about 5-7 minutes until the vegetables are softened.
- Stir in the curry powder, cumin, and turmeric, cooking for an additional 1-2 minutes until fragrant.
- Add the rinsed lentils and vegetable broth to the pot. Bring to a boil, then reduce heat to low and simmer for 25-30 minutes, or until lentils are tender.
- Stir in the coconut milk and season with salt and black pepper to taste. Let it simmer for another 5 minutes to heat through.
