  • Vegetable broth - 500 milliliters
  • Coconut milk - 200 milliliters
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a pot over medium heat. Add the diced onion, garlic, carrot, and celery, sautéing until the onion becomes translucent (about 5 minutes).
  2. Stir in the curry powder and cook for an additional minute until fragrant.
