- Coconut milk - 1 cup (240ml)
- Water - 1/2 cup (120ml)
- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Curry powder - 1 tablespoon
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-5 minutes.

- Add the rinsed rice to the pot, stirring to coat the grains with the onion and spice mixture.

- Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes or until the rice is tender and the liquid is absorbed.
