Ingredients

  • Basmati rice - 1 cup
  • Chicken thighs, boneless and skinless - 300 grams
  • Onion, thinly sliced - 1 medium
  • Garlic, minced - 3 cloves
  • Ginger, grated - 1 tablespoon
  • Tomato, diced - 1 medium
  • Yogurt - 1/2 cup
  • Curry powder - 1 tablespoon
  • Turmeric powder - 1 teaspoon
  • Cumin powder - 1 teaspoon
  • Cilantro, chopped - 1/4 cup
  • Mint leaves, chopped - 1/4 cup
  • Green chili, slit - 1
  • Vegetable oil - 3 tablespoons
  • Salt - to taste
  • Water - 2 cups
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large bowl, marinate the chicken thighs with yogurt, curry powder, turmeric powder, cumin powder, garlic, ginger, lemon juice, and salt. Let it sit for at least 20 minutes.
  3. Heat the vegetable oil in a large pot over medium heat. Add the sliced onions and sauté until golden brown.
  4. Add the marinated chicken to the pot and cook until the chicken is browned, about 7-10 minutes.
  5. Stir in the diced tomato, green chili, cilantro, and mint leaves. Cook for another 5 minutes until the tomato softens.
  6. In a separate pot, bring 2 cups of water to a boil. Add the soaked basmati rice to the boiling water and cook until it's about 70% done, about 5-6 minutes. Drain the rice.
  7. Layer the partially cooked rice over the chicken mixture in the pot. Cover the pot tightly with a lid and reduce the heat to low. Cook for another 15-20 minutes until the rice is fully cooked and has absorbed the flavors.
  8. Remove from heat and let it sit covered for an additional 5 minutes before serving. Fluff the biryani with a fork and serve hot.
