- Basmati rice - 1 cup
- Chicken thighs, boneless and skinless - 300 grams
- Onion, thinly sliced - 1 medium
- Garlic, minced - 3 cloves
- Ginger, grated - 1 tablespoon
- Tomato, diced - 1 medium
- Yogurt - 1/2 cup
- Curry powder - 1 tablespoon
- Turmeric powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Cilantro, chopped - 1/4 cup
- Mint leaves, chopped - 1/4 cup
- Green chili, slit - 1
- Vegetable oil - 3 tablespoons
- Salt - to taste
- Water - 2 cups
- Lemon juice - 1 tablespoon
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a large bowl, marinate the chicken thighs with yogurt, curry powder, turmeric powder, cumin powder, garlic, ginger, lemon juice, and salt. Let it sit for at least 20 minutes.
- Heat the vegetable oil in a large pot over medium heat. Add the sliced onions and sauté until golden brown.
- Add the marinated chicken to the pot and cook until the chicken is browned, about 7-10 minutes.
- Stir in the diced tomato, green chili, cilantro, and mint leaves. Cook for another 5 minutes until the tomato softens.
- In a separate pot, bring 2 cups of water to a boil. Add the soaked basmati rice to the boiling water and cook until it's about 70% done, about 5-6 minutes. Drain the rice.
- Layer the partially cooked rice over the chicken mixture in the pot. Cover the pot tightly with a lid and reduce the heat to low. Cook for another 15-20 minutes until the rice is fully cooked and has absorbed the flavors.
- Remove from heat and let it sit covered for an additional 5 minutes before serving. Fluff the biryani with a fork and serve hot.
