Steps
- Rinse the basmati rice under cold water until the water runs clear, then drain.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
- Stir in the minced garlic, diced carrot, and bell pepper. Cook for another 5 minutes until the vegetables begin to soften.
- Add the curry powder, turmeric, salt, and black pepper to the pan, stirring well to coat the vegetables in the spices.
- Pour in the vegetable broth and bring to a boil. Once boiling, add the rinsed rice and green peas.
- Reduce the heat to low, cover the saucepan, and simmer for 15-18 minutes, or until the rice is fully cooked and has absorbed the liquid.
- Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes.
- Fluff the rice with a fork, garnish with chopped cilantro, and serve warm.
