  • Basmati rice - 1 cup

  • Carrot - 1 medium, diced
  • Bell pepper - 1 small, diced
  • Green peas - 1/2 cup (fresh or frozen)
  • Curry powder - 1 tablespoon
  • Turmeric - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic, diced carrot, and bell pepper. Cook for another 5 minutes until the vegetables begin to soften.
  4. Add the curry powder, turmeric, salt, and black pepper to the pan, stirring well to coat the vegetables in the spices.
  5. Pour in the vegetable broth and bring to a boil. Once boiling, add the rinsed rice and green peas.
  6. Reduce the heat to low, cover the saucepan, and simmer for 15-18 minutes, or until the rice is fully cooked and has absorbed the liquid.
  7. Remove the saucepan from the heat and let it sit, covered, for an additional 5 minutes.
  8. Fluff the rice with a fork, garnish with chopped cilantro, and serve warm.
