Ingredients

  • Cooked green lentils - 1 cup
  • Rolled oats - 1/2 cup
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, grated
  • Curry powder - 1 tablespoon
  • Cumin - 1 teaspoon
  • Cilantro - 1/4 cup, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for cooking)
  • Burger buns - 2 pieces
  • Lettuce leaves - 2 pieces
  • Tomato - 1 medium, sliced
  • Avocado - 1/2, sliced
  • Vegan mayonnaise - 2 tablespoons

Steps

  1. In a large bowl, combine the cooked lentils, rolled oats, chopped onion, minced garlic, grated carrot, curry powder, cumin, cilantro, salt, and black pepper. Mix until well combined.
  2. Using your hands, form the mixture into two burger patties.
  3. Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the burger patties and cook for about 5-6 minutes on each side, until golden brown and heated through.
  4. While the patties are cooking, toast the burger buns in another skillet or in a toaster.
  5. Assemble the burgers by spreading vegan mayonnaise on the bottom half of each bun, then adding a lettuce leaf, the lentil burger patty, tomato slices, and avocado. Top with the other half of the bun.
  6. Serve immediately with your favorite sides.
