- Cooked green lentils - 1 cup
- Rolled oats - 1/2 cup
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 small, grated
- Curry powder - 1 tablespoon
- Cumin - 1 teaspoon
- Cilantro - 1/4 cup, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Burger buns - 2 pieces
- Lettuce leaves - 2 pieces
- Tomato - 1 medium, sliced
- Avocado - 1/2, sliced
- Vegan mayonnaise - 2 tablespoons
Steps
- In a large bowl, combine the cooked lentils, rolled oats, chopped onion, minced garlic, grated carrot, curry powder, cumin, cilantro, salt, and black pepper. Mix until well combined.
- Using your hands, form the mixture into two burger patties.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the burger patties and cook for about 5-6 minutes on each side, until golden brown and heated through.
- While the patties are cooking, toast the burger buns in another skillet or in a toaster.
- Assemble the burgers by spreading vegan mayonnaise on the bottom half of each bun, then adding a lettuce leaf, the lentil burger patty, tomato slices, and avocado. Top with the other half of the bun.
- Serve immediately with your favorite sides.
