Ingredients

  • Sushi rice - 1 cup
  • Water - 1 1/4 cups
  • Rice vinegar - 2 tablespoons
  • Sugar - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Nori sheets - 4 sheets
  • Cucumber - 1 medium, julienned
  • Avocado - 1 large, sliced
  • Sesame seeds - 1 tablespoon
  • Soy sauce - for serving
  • Pickled ginger - for serving

Steps

  1. Rinse the sushi rice under cold water until the water runs clear, then drain.
  2. In a saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed.
  3. While the rice cooks, mix the rice vinegar, sugar, and salt in a small bowl until dissolved.
  4. Once the rice is cooked, remove from heat and let it sit covered for 10 minutes. Then, transfer it to a large bowl and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.
  5. Lay a sheet of nori on a bamboo sushi mat or a clean surface, shiny side down.
  6. Wet your hands to prevent sticking, then take about 1/2 cup of sushi rice and spread it evenly over the nori, leaving a 2-inch border at the top.
  7. Arrange a line of cucumber and avocado slices across the center of the rice.
  8. Sprinkle sesame seeds over the top of the vegetables.
  9. Starting from the bottom, carefully roll the sushi away from you, using the mat to help keep it tight. Use a bit of water to seal the edge of the nori.
  10. Repeat with the remaining nori sheets, rice, cucumber, and avocado.
  11. Using a sharp knife, slice each roll into 6-8 pieces and serve with soy sauce and pickled ginger.
