Ingredients

  • Beef flank steak - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, sliced
  • Bell pepper - 1 medium (preferably red), sliced
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Paprika - 1 teaspoon
  • Bay leaf - 1
  • Tomato sauce - 200 grams
  • Beef broth - 250 milliliters
  • Salt - to taste
  • Black pepper - to taste
  • Cilantro - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the sliced onion and bell pepper, and sauté until softened, about 5 minutes.
  2. Add the minced garlic, cumin, oregano, paprika, salt, and black pepper to the pot. Stir well and cook for another 2 minutes until fragrant.
  3. Add the beef flank steak to the pot along with the tomato sauce, beef broth, and bay leaf. Bring to a simmer.
  4. Cover the pot, reduce the heat to low, and let it cook for about 1.5 hours, or until the beef is tender and easily shreds with a fork.
  5. Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot, stirring to combine it with the sauce. Cook for an additional 10 minutes.
  6. Serve the Ropa Vieja hot, garnished with fresh cilantro, alongside rice and black beans.
