Ingredients
- Zucchini - 300 grams
- All-purpose flour - 50 grams
- Chickpea flour - 30 grams
- Green onion, chopped - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - for frying
- Fresh parsley, chopped - 2 tablespoons
Steps
- Grate the zucchini using a box grater or food processor, then place it in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine the grated zucchini, all-purpose flour, chickpea flour, green onion, garlic powder, onion powder, salt, black pepper, and chopped parsley. Mix until well combined.
- Heat a non-stick skillet over medium heat and add enough olive oil to coat the bottom.
- Once the oil is hot, scoop about 2 tablespoons of the zucchini mixture into the skillet, flattening it slightly with the back of a spatula. Repeat with remaining mixture, ensuring not to overcrowd the pan.
- Cook each fritter for about 3-4 minutes on each side or until golden brown and crispy.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil.
- Serve warm, garnished with additional parsley if desired.
