Ingredients

  • Zucchini - 300 grams
  • All-purpose flour - 50 grams
  • Chickpea flour - 30 grams
  • Green onion, chopped - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - for frying
  • Fresh parsley, chopped - 2 tablespoons

Steps

  1. Grate the zucchini using a box grater or food processor, then place it in a clean kitchen towel and squeeze out excess moisture.
  2. In a large bowl, combine the grated zucchini, all-purpose flour, chickpea flour, green onion, garlic powder, onion powder, salt, black pepper, and chopped parsley. Mix until well combined.
  3. Heat a non-stick skillet over medium heat and add enough olive oil to coat the bottom.
  4. Once the oil is hot, scoop about 2 tablespoons of the zucchini mixture into the skillet, flattening it slightly with the back of a spatula. Repeat with remaining mixture, ensuring not to overcrowd the pan.
  5. Cook each fritter for about 3-4 minutes on each side or until golden brown and crispy.
  6. Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil.
  7. Serve warm, garnished with additional parsley if desired.
