Ingredients

  • Zucchini - 2 medium-sized (approx. 300g)
  • All-purpose flour - 1/4 cup (30g)
  • Egg - 1 large
  • Breadcrumbs - 1 cup (100g)
  • Parmesan cheese - 1/4 cup (25g), grated
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Wash and cut the zucchini into thin strips, about 1 cm wide.
  3. In a shallow bowl, place the all-purpose flour. In a second bowl, beat the egg. In a third bowl, mix the breadcrumbs, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper.
  4. Coat each zucchini strip in flour, shaking off excess, then dip into the beaten egg, and finally roll in the breadcrumb mixture until fully coated.
  5. Place the coated zucchini fries on the prepared baking sheet in a single layer. Drizzle with olive oil.
  6. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even cooking.
  7. Remove from the oven and let cool slightly before serving.
