- 2 large whole wheat tortillas
- 1 cup bell peppers, thinly sliced
- 1 cup zucchini, thinly sliced
- 1 cup carrots, julienned
- 1/2 cup red onion, thinly sliced
- 1/2 cup shredded mozzarella cheese
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a large bowl, combine the sliced bell peppers, zucchini, carrots, red onion, garlic powder, paprika, salt, and pepper.
- Drizzle the olive oil over the vegetables and toss until well coated.
- Spread the vegetable mixture on a baking sheet in a single layer and roast in the oven for 15 minutes.
- Remove from the oven and let cool for a few minutes.
- Lay a tortilla flat on a clean surface, sprinkle 1/4 cup of shredded mozzarella cheese in the center, and top with half of the roasted vegetable mixture and half of the cilantro.
- Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top.
- Repeat with the second tortilla and remaining ingredients.
- In a non-stick skillet, heat a small amount of olive oil over medium heat.
- Place the wraps seam side down in the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
- Slice the wraps in half and serve warm.
