Ingredients

  • 2 large whole wheat tortillas
  • 1 cup bell peppers, thinly sliced
  • 1 cup zucchini, thinly sliced
  • 1 cup carrots, julienned
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a large bowl, combine the sliced bell peppers, zucchini, carrots, red onion, garlic powder, paprika, salt, and pepper.
  3. Drizzle the olive oil over the vegetables and toss until well coated.
  4. Spread the vegetable mixture on a baking sheet in a single layer and roast in the oven for 15 minutes.
  5. Remove from the oven and let cool for a few minutes.
  6. Lay a tortilla flat on a clean surface, sprinkle 1/4 cup of shredded mozzarella cheese in the center, and top with half of the roasted vegetable mixture and half of the cilantro.
  7. Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top.
  8. Repeat with the second tortilla and remaining ingredients.
  9. In a non-stick skillet, heat a small amount of olive oil over medium heat.
  10. Place the wraps seam side down in the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
  11. Slice the wraps in half and serve warm.
