  • Spinach leaves - 50 grams
  • Cream cheese - 100 grams
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Garlic powder - 1/4 teaspoon
  • Dried oregano - 1/4 teaspoon
  • Vegetable oil - for frying

Steps

  1. In a bowl, mix cream cheese with salt, black pepper, garlic powder, and dried oregano until well combined.
  2. Spread the cream cheese mixture evenly on one side of each slice of bread.
  3. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add zucchini and red bell pepper; sauté for about 3-4 minutes until slightly tender.
  4. Remove the vegetables from the skillet and set aside to cool slightly.
  5. Assemble the sandwich: on the cream cheese side of two bread slices, layer sautéed vegetables, grated carrot, cucumber slices, and fresh spinach leaves.
  6. Top with the remaining bread slices, cream cheese side down, to form two sandwiches.
  7. In the same skillet, heat a small amount of vegetable oil over medium-high heat. Carefully place the sandwiches in the skillet and cook for 3-4 minutes on each side until golden brown and crispy.
