Ingredients

  • all-purpose flour - 1 cup
  • vegetable oil - 3 tablespoons (for dough) + for frying
  • water - 1/4 cup
  • potato - 100 grams, boiled and mashed
  • green peas - 50 grams, cooked
  • carrot - 50 grams, finely chopped
  • onion - 1 small, finely chopped
  • ginger - 1 teaspoon, grated
  • cumin seeds - 1/2 teaspoon
  • coriander powder - 1 teaspoon
  • garam masala - 1/2 teaspoon
  • salt - to taste
  • black pepper - to taste
  • lemon juice - 1 teaspoon
  • fresh cilantro - 2 tablespoons, chopped

Steps

  1. In a mixing bowl, combine the all-purpose flour and 3 tablespoons of vegetable oil. Gradually add water until a smooth, firm dough forms. Cover with a damp cloth and set aside for 30 minutes.
  2. In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add cumin seeds and let them splutter. Then add chopped onions and ginger, sauté until onions become translucent.
  3. Add the boiled and mashed potato, cooked peas, chopped carrot, coriander powder, garam masala, salt, and black pepper. Mix well and cook for 5-7 minutes until the vegetables are well combined. Stir in lemon juice and chopped cilantro. Allow the filling to cool.
  4. Divide the dough into small balls and roll each ball into a thin oval shape. Cut the oval in half to create two semi-circles.
  5. Take one semi-circle, form a cone by folding the straight edge and sealing it with a little water. Fill the cone with the vegetable mixture and seal the top by pressing the edges together.
  6. Repeat with the remaining dough and filling. Heat oil in a deep frying pan over medium heat. Fry the samosas in batches until they are golden and crispy, about 4-5 minutes per batch.
  7. Remove the samosas and drain on paper towels. Serve hot with your favorite chutney.
