Ingredients
- all-purpose flour - 1 cup
- vegetable oil - 3 tablespoons (for dough) + for frying
- water - 1/4 cup
- potato - 100 grams, boiled and mashed
- green peas - 50 grams, cooked
- carrot - 50 grams, finely chopped
- onion - 1 small, finely chopped
- ginger - 1 teaspoon, grated
- cumin seeds - 1/2 teaspoon
- coriander powder - 1 teaspoon
- garam masala - 1/2 teaspoon
- salt - to taste
- black pepper - to taste
- lemon juice - 1 teaspoon
- fresh cilantro - 2 tablespoons, chopped
Steps
- In a mixing bowl, combine the all-purpose flour and 3 tablespoons of vegetable oil. Gradually add water until a smooth, firm dough forms. Cover with a damp cloth and set aside for 30 minutes.
- In a pan, heat 1 tablespoon of vegetable oil over medium heat. Add cumin seeds and let them splutter. Then add chopped onions and ginger, sauté until onions become translucent.
- Add the boiled and mashed potato, cooked peas, chopped carrot, coriander powder, garam masala, salt, and black pepper. Mix well and cook for 5-7 minutes until the vegetables are well combined. Stir in lemon juice and chopped cilantro. Allow the filling to cool.
- Divide the dough into small balls and roll each ball into a thin oval shape. Cut the oval in half to create two semi-circles.
- Take one semi-circle, form a cone by folding the straight edge and sealing it with a little water. Fill the cone with the vegetable mixture and seal the top by pressing the edges together.
- Repeat with the remaining dough and filling. Heat oil in a deep frying pan over medium heat. Fry the samosas in batches until they are golden and crispy, about 4-5 minutes per batch.
- Remove the samosas and drain on paper towels. Serve hot with your favorite chutney.
