Ingredients

  • Flour tortillas - 4 (8-inch)
  • Shredded cheese (cheddar or Monterey Jack) - 200 grams
  • Red bell pepper - 1 (diced)
  • Zucchini - 1 medium (diced)
  • Mushrooms - 100 grams (sliced)
  • Spinach - 50 grams (fresh)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Cumin powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sour cream - for serving (optional)
  • Salsa - for serving (optional)

Steps

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for 30 seconds until fragrant.
  2. Add the diced red bell pepper, zucchini, and sliced mushrooms to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.
  3. Stir in the spinach, cumin, salt, and black pepper. Cook for an additional 2-3 minutes until the spinach is wilted. Remove from heat and set aside.
  4. In another skillet, heat the remaining tablespoon of olive oil over medium heat. Place one tortilla in the skillet.
  5. Sprinkle half of the shredded cheese over the tortilla, then evenly distribute half of the vegetable mixture on top of the cheese. Top with another layer of cheese and cover with a second tortilla.
  6. Cook for 2-3 minutes until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla and cook for another 2-3 minutes until the other side is golden and crispy.
  7. Remove from the skillet and let it cool for a minute before cutting into wedges. Repeat with the remaining tortillas and filling.
  8. Serve warm with sour cream and salsa if desired.
