Ingredients

  • Potato - 1 medium (150g)
  • Carrot - 1 medium (100g)
  • Spinach - 50g
  • Onion - 1 small (50g)
  • Chickpea flour - 100g
  • Rice flour - 30g
  • Cumin seeds - 1 teaspoon
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Water - 150ml
  • Oil for frying - 500ml (for deep frying)

Steps

  1. Peel and slice the potato and carrot into thin strips. Chop the spinach and onion finely.
  2. In a large bowl, combine chickpea flour, rice flour, cumin seeds, turmeric powder, red chili powder, salt, and baking powder.
  3. Gradually add water to the dry ingredients, mixing until you achieve a smooth batter.
  4. Add the sliced vegetables to the batter, ensuring they are well coated.
  5. Heat oil in a deep frying pan over medium heat until hot (about 180°C or 350°F).
  6. Carefully drop spoonfuls of the vegetable-batter mixture into the hot oil, frying them in batches to avoid overcrowding.
  7. Fry for about 4-5 minutes or until golden brown and crispy, turning occasionally for even cooking.
  8. Remove the pakoras with a slotted spoon and drain on paper towels to remove excess oil.
  9. Serve hot with chutney or yogurt sauce.
