Ingredients

  • Carrot - 100 grams, grated
  • Zucchini - 100 grams, grated and drained
  • Broccoli - 50 grams, finely chopped
  • Cauliflower - 50 grams, finely chopped
  • Garlic - 1 clove, minced
  • Egg - 1 large
  • All-purpose flour - 30 grams
  • Breadcrumbs - 50 grams
  • Parmesan cheese - 20 grams, grated
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon

Steps

  1. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the grated carrot, grated zucchini, chopped broccoli, chopped cauliflower, and minced garlic.
  3. Add the egg, flour, half of the breadcrumbs, Parmesan cheese, salt, black pepper, and paprika to the vegetable mixture. Mix until well combined.
  4. Form the mixture into small nugget shapes approximately 2.5 cm (1 inch) thick.
  5. Coat each nugget in the remaining breadcrumbs, pressing gently to adhere.
  6. Place the coated nuggets on the prepared baking sheet and drizzle with olive oil.
  7. Bake in the preheated oven for 20 minutes, flipping halfway through until golden brown and crispy.
  8. Remove from the oven and let cool slightly before serving.
