- Carrot - 100 grams, grated
- Zucchini - 100 grams, grated and drained
- Broccoli - 50 grams, finely chopped
- Cauliflower - 50 grams, finely chopped
- Garlic - 1 clove, minced
- Egg - 1 large
- All-purpose flour - 30 grams
- Breadcrumbs - 50 grams
- Parmesan cheese - 20 grams, grated
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
Steps
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the grated carrot, grated zucchini, chopped broccoli, chopped cauliflower, and minced garlic.
- Add the egg, flour, half of the breadcrumbs, Parmesan cheese, salt, black pepper, and paprika to the vegetable mixture. Mix until well combined.
- Form the mixture into small nugget shapes approximately 2.5 cm (1 inch) thick.
- Coat each nugget in the remaining breadcrumbs, pressing gently to adhere.
- Place the coated nuggets on the prepared baking sheet and drizzle with olive oil.
- Bake in the preheated oven for 20 minutes, flipping halfway through until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
