Ingredients

  • Bell peppers (red, yellow, green) - 1 cup sliced
  • Onion - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Mushrooms - 1 cup, sliced
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Avocado - 1 medium, sliced

Steps

  1. In a large bowl, combine sliced bell peppers, onion, zucchini, and mushrooms.
  2. Drizzle with olive oil and sprinkle cumin, chili powder, garlic powder, salt, and black pepper over the vegetables. Toss to coat evenly.
  3. Preheat a large skillet over medium-high heat. Once hot, add the seasoned vegetables and sauté for about 10-12 minutes, stirring occasionally, until the vegetables are tender and slightly charred.
  4. While the vegetables are cooking, warm the corn tortillas in a separate skillet over medium heat for about 1-2 minutes on each side until pliable.
  5. Once the vegetables are cooked, remove them from the heat and squeeze fresh lime juice over them. Stir in chopped cilantro.
  6. To assemble, place a portion of the crispy vegetable mixture onto each tortilla, top with sliced avocado, and fold the tortillas over.
