Ingredients

  • Cornstarch - 30 grams
  • Baking Powder - 1 teaspoon
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon
  • Paprika - 1/2 teaspoon
  • Olive Oil - for frying

Steps

  1. In a large mixing bowl, combine the grated carrot, grated zucchini, chopped bell pepper, chopped green onion, and minced garlic.
  2. In another bowl, mix the all-purpose flour, cornstarch, baking powder, salt, black pepper, and paprika.
  3. Add the dry mixture to the vegetable mixture and stir until well combined.
  4. Beat the egg in a small bowl and add it to the mixture, stirring until everything is evenly coated.
  5. Heat olive oil in a deep skillet over medium heat.
  6. Once the oil is hot, scoop tablespoon-sized portions of the mixture and carefully drop them into the hot oil.
  7. Fry the vegetable bites for about 3-4 minutes on each side or until they are golden brown and crispy.
  8. Remove from the oil and place on paper towels to drain excess oil.
