- Firm tofu - 200 grams, cubed
- Cornstarch - 2 tablespoons

- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Red onion - 1/2, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
- Avocado - 1, sliced
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, toss the cubed tofu with cornstarch, salt, and pepper until evenly coated.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the tofu and cook until golden brown and crispy, about 8-10 minutes, flipping occasionally.
- Remove the tofu from the skillet and set aside. In the same skillet, add the remaining olive oil and sauté the red onion for 2 minutes until translucent.
- Add the garlic, red bell pepper, and zucchini to the skillet. Sprinkle with cumin, chili powder, salt, and pepper. Cook for an additional 5-7 minutes until the vegetables are tender.
- Combine the crispy tofu with the sautéed vegetables in the skillet, mixing well.
- Warm the corn tortillas in the oven for about 5 minutes or until pliable.
- Assemble the tacos by placing a portion of the tofu and vegetable mixture on each tortilla. Top with fresh cilantro and avocado slices.
- Serve with lime wedges on the side for squeezing over the tacos.
