Ingredients

  • Firm tofu - 200 grams, cubed
  • Cornstarch - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Red onion - 1/2, diced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges
  • Avocado - 1, sliced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, toss the cubed tofu with cornstarch, salt, and pepper until evenly coated.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the tofu and cook until golden brown and crispy, about 8-10 minutes, flipping occasionally.
  4. Remove the tofu from the skillet and set aside. In the same skillet, add the remaining olive oil and sauté the red onion for 2 minutes until translucent.
  5. Add the garlic, red bell pepper, and zucchini to the skillet. Sprinkle with cumin, chili powder, salt, and pepper. Cook for an additional 5-7 minutes until the vegetables are tender.
  6. Combine the crispy tofu with the sautéed vegetables in the skillet, mixing well.
  7. Warm the corn tortillas in the oven for about 5 minutes or until pliable.
  8. Assemble the tacos by placing a portion of the tofu and vegetable mixture on each tortilla. Top with fresh cilantro and avocado slices.
  9. Serve with lime wedges on the side for squeezing over the tacos.
